Perfect Curry Chicken Wraps

Myka Smith-Jackson

"I was on the Internet, and was thinking, You know, anything can be made into a wrap. So I decided that I'd make a curry chicken wrap," says Myka. "For a side: sliced strawberries and a fruit and yogurt smoothie." Myka's recipe calls for grilled chicken, but you can use any kind of cooked chicken. –Myka Smith-Jackson, age 8, Kentucky

Makes 2 to 4 servings

Ingredients:

2 grilled skinless boneless chicken breasts, cut into bite-size pieces

2 stalks celery, chopped

1 red apple, peeled and diced

1/4 cup raisins

1/2 cup mayonnaise

1/4 teaspoon curry powder

Salt and pepper

2 (10-inch) whole-wheat tortillas

Preparation:

  1. In a large bowl, combine the chicken, celery, apple, raisins, mayonnaise, and curry powder. Stir to combine, and season to taste with salt and pepper.
  2. Divide the mixture between the tortillas, and wrap tightly around the filling from bottom to top, overlapping one end, burrito style. Cut the wraps in half to serve.
