I’m very surprised that a booklet published in 2008 is still promoting the use of margarine and "light mayonaise". Margarine is known to be less healthy than butter as it is usually made of hydrogenated vegetable oils (extremely unnaturally processed) which contain trans fats = something that your body can’t properly digest and it just makes you gain more weight. Try regular (preferably organic) butter or something like Earth Balance (a healthy non-hydrogenated butter substitute) or an even healthier and delicious oil like coconut oil instead. In terms of the light mayo, i’m not sure how bad that is for you or how they make it "light" but I’m guessing its some intense processing that is probably best avoided. In the potato salad recipe try using mashed avocados instead of mayo - it’s delicious, creamy and contains healthy fats your body needs. In general i think this guide and others like it should promote less processed foods and more simple, natural ingredients. It would also be nice to see a few vegetarian main courses designed for a later edition of this booklet. Overconsumption of meat is associated with many health problems and it’s something the community should be aware of. However, i also want to say I think its a great idea to put out a guide like this and I appreciate it being made available, so thanks for that!

why is it there is an african american style and latino style cookbook? do white people not deserve a cookbook as well? Let me guess it’s the other cookbook not labeled with an ethnic designation, because to call it a caucasian cookbook would be discriminatory.

why offer this in the recipes section if you have to buy the recipes you could use the $4.00 for the book to buy some needed fruits and vegs for your heart healthy home cooking very discouraging

I haven’t cooked all the dishes yet but I downloaded the pamphlet and I like what I see. I am already using some of the modifications that are suggested, but I like the spicing suggestions in some of the recipes.

I found all the recipes, all u have to do is click on pdf and it will show as long as u have pdf platform on your computer. I was able to pull the information up without paying a penny for them. Anyway, I found the recipes to be similar to the recipes that I am currently using and some with different ingredients. So, I beileve that they will be very tasty and some I’ve never tried b 4 but my mouth watered reading it. I can hardly wait to try them out. Thanks

I jumped the gun a bit and read the other reviews first without even attempting to download the book myself. You can view and download this as a PDF, I have an many of the receipes shown I am very much impressed with. Again I apologize for my previous review, I am the type of person to admit I was wrong and I can 100% say that I was. I hope everyone that comes to this site checks out the receipes many of them are really good, look almost like a page out of my personal cookbook....Thanks!!!

I was able to open the PDF without any problems at all. I am going to print out and use IMMEDIATELY. I have been in a "recipe funk" and I am looking forward to trying some of the amazing recipes ASAP. Some of the recipes include: Candied Yams, Classic Mac & Cheese, Spicy Okra, Crispy Oven Fried Chicken, Mouth-Watering Oven-Fried Fish, Peach Cobbler and Mock-Southern Sweet Potato Pie....yum, yum, yum. I am so glad this resource is out there. Move over Emeril.....BAM!

The sequence of the directions in the recipe for Jerk Chicken should start with washing/marinating the chicken breasts before preheating the oven. No reason to start the oven, then read on and discover it’s going to be 6 hours before you cook anything! 1. Preheat oven to 350 degrees Fahrenheit. Wash chicken and pat dry. 2. Combine all ingredients except chicken in large bowl. Rub seasonings over chicken and marinate in refrigerator for 6 hours or longer.

Interesting recipes, but there’s a mistake on the Jerk Chicken recipe. It tells you to preheat your oven, then marinade the chicken for 6 hours! Hopefully nobody left their oven on for 6 hours while the chicken marinated...

Thank you for this cookbook. My husband has hypertension and I am predisposed to diabetes. This cookbook has really been a help in RE-LEARNING to cook. This book should be in EVERY African-American kitchen.

As an African American, all of the recipes on this site were like staples to me and unfortunately unhealthy. I am able to change that now that I have found this site with almost every single one of the recipes I have cooked for years but now healthier. Thank you...... I am beginning to feel better already.

This cookbook should be on school and library bookshelves and out where many people can see and buy it. It’s practical, inexpensive and has tasty recipes that don’t have to take a lot of time.
