National School Lunch Week Continues with Turkey Quesadillas

The National School Lunch Program provides nutritious meals to millions of American children and helps educate kids on making healthy choices early in life.

To help make the program even better, Let’s Move!, in association with the U.S. Department of Agriculture (USDA), is challenging school nutrition professionals, chefs, students, parents and interested community members to create tasty, healthy, exciting new recipes – and the best recipes can compete for the chance to be included on school lunch menus across the country.  Learn more about the Recipes for Healthy Kids competition to find out how you can start participating today.

In recognition of National School Lunch Week, here’s another lunchtime recipe that you can try at home.

Today’s Recipe: Smoked Turkey, Apple and Cheese Quesadillas

Ingredients
4 whole-wheat flour tortillas (8 inches across)
4 teaspoons prepared honey mustard
1/2 cup shredded Monterey Jack
4 ounces smoked turkey breast deli meat
1 Mcintosh apple, thinly sliced
1 cup shredded reduced-fat cheddar

Preparation
Lay out tortillas and spread each with 1 teaspoon honey mustard. Place 1 tortilla, mustard side up, in a large nonstick skillet over medium heat. Top one half with 1/8 cup Monterey Jack cheese, 1 ounce turkey breast, 1/4 of the apple slices and 1/4 cup cheddar. Fold tortilla in half over ingredients and gently press. Cook 3 minutes. Flip and cook until both sides are golden and cheese is oozing slightly, about 2 minutes more. Remove quesadilla from skillet and slice into thirds. Repeat with remaining tortillas.
