Overview


USDA is responsible for regulating meat and poultry, egg products, and catfish, whereas the U.S. Food and Drug Administration (FDA) oversees food safety for almost all other foods. Companies value maintaining their reputations for producing safe products, and there are several ways that plants and regulators can provide food safety process control. 

ERS examines how private markets and government regulation interact to help ensure the safety of the U.S. food supply. This research covers three key areas:

  1. private market mechanisms that control food safety,
  2. regulation of meat and poultry slaughter and processing practices, and
  3. innovation enhancing meat and poultry food safety.
